I always have mixed feelings about New Year's Eve. I want to feel happy and optimistic, but I usually feel sad and reflective. I remember New Year's Eves when I was a little girl that were fun. I loved seeing my parents, aunts and uncles all dressed up. I loved putting on a party dress myself, having a tiny sip of a Champagne cocktail and trying to stay up until midnight. I remember one simply perfect New Year's Eve and a perfectly abysmal one. I think what I need is a large, noisy party. Failing that, maybe just a glass of Champagne. And, what goes better with Champagne than oysters and/or caviar? So, here's to a happy, optimistic New Year. Cheers!
Grilled Oysters
I love oysters, but they are not easy- open. Rinse the oysters first, then put a heavy oven mit on one hand and insert a strong-bladed oyster knife near the hinge at the back of the shell. Twist and the oyster should pop open. Cut the oyster free from the shell, but leave it in. There are several gadgets available to make this easier. Surprisingly, a microwave oven can help open oysters. Place oysters in a circle on a large microwave-safe plate. Microwave 45 seconds - 2 minutes on High (100%). The oysters should pop open at the hinge eliminating a bit of the work.
Serves 4
2 dozen oysters
Tabasco
1/2 pint heavy cream
4 tablespoons butter, melted
1 small jar caviar (as expensive as you can go)
Open oysters and place in a dish suitable for broiling. Put a drop of Tabasco on each. Top with 2 tablespoons of cream. Drizzle with melted butter and place under a preheated broiler, about 6 - inches from the heat for 2 - 3 minutes. When lightly browned, top each with 1/8 teaspoon of caviar and serve warm. If you don't like caviar, substitute chopped fresh tarragon or chives.
